Steam rises gently from the couscous pot, carrying with it the aroma of ras el hanout that has been infusing the vegetables for hours. Salma welcomes you with a cup of hot mint tea: welcome to her restaurant in the Kasbah Souss, in Agadir. This Agadir couscous that you’ll prepare together is the Friday dish of Moroccan families-a patient, generous recipe passed down from mother to daughter for generations.

The schedule follows the natural rhythm of the couscous, not that of a timer. Salma first takes you to the market to choose the ingredients, then guides you through each step of the preparation until the final tasting.

There are as many versions of couscous as there are families. You choose yours at the start of the workshop: vegetarian with seasonal vegetables, with one type of meat (chicken, lamb, or beef), with two types of meat, or Agadir royal couscous, which combines several meats in a single generous serving. The steaming technique in the traditional couscous pot is the key skill Salma teaches you: fluffing the semolina by hand between rounds, measuring the water and spices without weighing them, and adjusting to taste. One key fact to remember: in traditional Moroccan cooking, the semolina goes through the couscous pot two to three times, never just once.

Le couscous du vendredi est sa spécialité : semoule roulée à la main, bouillon mijoté lentement, épices dosées à l'instinct.
